#isobaking - Vegan Banana and Dark Chocolate Bread

It's another great day to share some of our chefs' baking ideas while they are in isolation during the NZ COVID-19 lockdown. Get your ingredients ready for this tasty recipe!


3 ripe bananas

1/4 cup light oil

1/4 cup non dairy milk

1/2 cup light brown sugar

2tsp vanilla extract

2 cups flour

1tsp cinnamon

1tsp baking powder

1/2 tsp salt

100g chocolate chips (optional)

Handful of chopped walnuts (optional) 

Start by preheating your oven to 180°c, grease a loaf tin and line with baking parchment.

In a medium bowl, mash your bananas roughly. Add the oil, non dairy milk, brown sugar and vanilla, and mix to combine. 

Sift in the flour, baking powder, cinnamon and salt and with a wooden spoon, gently fold in. Chuck in your chocolate chips or nuts. Transfer your mix into your prepared tin, I put some walnuts on top, or you can slice another banana and use that.

Bake in the oven for 45 minutes. Insert a cocktail stick, if it comes out clean it's ready if not pop some foil over top and place back in the oven for another 10 minutes. Allow to cool slightly before placing on a cooling rack. Enjoy!
